The use of individual wines based on traditional Roman winemaking methods, using ancient tools such as the Archimedes screw conveyor and yeast techniques, and hand sifting the grapes bunch by bunch, provides the wines with special organoleptic characteristics as well as improving their physical-chemical stability.
The inspiration for this small winery"s artisanal wines came from a visit by José Pen, founder of the Penin Guide, who gave the owner advice on how to make individual, distinctive wines based on their characteristics.
