Michael Caines and Lyme Bay Winery launch sparkling wine products

Acclaimed chef Michael Caines recently collaborated with Lyme Bay Winery in Axminster to create a high-end English sparkling wine called Lympstone Manor Cuvee.

The Lympstone Estate in Exmouth is classified as a Grade II vineyard and is planted with 17,500 vines.

This sparkling wine is a blend of Chardonnay, Pinot Noir and Meunier from the Lympstone estate, which is rated II and where Caines holds the position of chef de cuisine.

Planted in 2018, these vines are planted in a southwest-facing vineyard overlooking the Exe estuary in the listed building, which houses a hotel and restaurant.

In 2017, when Caines opened Lympstone Manor Hotel and Restaurant, he planned to make wine on the property and quickly began planting 17,500 vines on the property.

Given the proximity of Lyme Bay Winery and Lympstone Estate in Devon, it made sense for them to collaborate on English sparkling wine.

The 2020 harvest will begin in early to mid-October and the first Lympstone Manor Cuvee wines will be available for sale in 2023.
